Classic "Forgotten" Chicken and Rice Bake

- 1 lb boneless skinless chicken breasts
- 2 cups Minute rice
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can water use one of the soup cans for measurement
- 1 envelope Lipton onion soup mix
- 1 tablespoon of butter diced into small chunks
Preheat Oven: Preheat your oven to 350°F (175°C).
Prepare the Baking Dish: Grease a 9x13-inch baking dish with a bit of cooking spray or butter.
Assemble the Ingredients: Spread the Minute rice evenly on the bottom of the baking dish. In a bowl, combine the cream of mushroom soup, cream of chicken soup, and one can of water, stirring until smooth. Pour this mixture over the rice. Arrange the chicken breasts on top of the rice and soup mixture. Evenly distribute the onion soup mix over the chicken. Dot with pieces of butter for added richness.
Bake: Cover the baking dish tightly with aluminum foil and bake for 1 hour. After an hour, check to ensure the chicken is fully cooked (internal temperature should reach 165°F or 74°C) and the rice is tender. If necessary, extend the baking time by an extra 5 to 10 minutes.
Serve: Let the dish rest for a few minutes, then serve warm. This meal complements a crisp green salad or a side of steamed vegetables beautifully.
