Ingredients
  

For the Salad:

  • 1 romaine heart chopped
  • 1 cooked chicken breast cubed
  • 2 hard-boiled or soft-boiled eggs
  • 2 pieces cooked bacon can substitute with turkey bacon
  • 1/4 cup feta cheese crumbled or cubed
  • 1/2 avocado cubed
  • 6 cherry tomatoes sliced in half
  • Red onion thinly sliced (optional)

For the Dressing:

  • 3 tablespoons white wine vinegar
  • 1 tablespoon olive oil
  • 1.5 tablespoons honey Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Prepare the dressing: In a small bowl, whisk together the white wine vinegar, olive oil, honey Dijon mustard, salt, and pepper until smooth and well combined. Set aside.
  • Cook the chicken and bacon: If you haven't already prepared your chicken breast and bacon, cook them according to your preference (grilled, baked, or pan-seared). Once done, cube the chicken and chop the bacon into bite-sized pieces.
  • Prepare the eggs: Boil the eggs to your liking (hard or soft-boiled). Once cooked, peel and slice them.
  • Assemble the salad: In a large bowl or platter, lay down a bed of chopped romaine lettuce. Arrange the cubed chicken, sliced eggs, bacon pieces, crumbled feta, cubed avocado, cherry tomatoes, and optional red onion slices on top of the lettuce.
  • Dress the salad: Drizzle the honey Dijon dressing over the salad. You can toss the salad gently to combine the ingredients or serve it as a composed salad with the dressing on the side for individual serving.
  • Serve and enjoy: Serve immediately and enjoy the hearty flavors and textures of this classic Cobb Salad.
