Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or donut hole pan to prevent sticking.
Mix Dry Ingredients: In a large mixing bowl, combine the flour, sugar, baking powder, ground cinnamon, and salt. Whisk together until well combined.
Combine Wet Ingredients: In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract until smooth.
Make the Batter: Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
Bake the Donut Bites: Spoon the batter into the prepared mini muffin tin or donut hole pan, filling each about ¾ of the way. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean and dry.
Prepare the Cinnamon-Sugar Coating: While the donut bites are baking, melt the additional ½ cup of butter in a small bowl. In a separate bowl, mix together the ½ cup of sugar and 2 teaspoons of ground cinnamon.
Coat the Donut Bites: Once the donut bites are baked and slightly cooled, dip each bite into the melted butter, then roll in the cinnamon-sugar mixture until fully coated.
Serve and Enjoy: Serve the donut bites warm or at room temperature. They’re best enjoyed fresh but can be stored in an airtight container for up to 2 days.
