Pour in the 2 cups of water and bring the soup to a boil. Once boiling, reduce the heat to a simmer and cook for 15-20 minutes, or until the chicken is tender and cooked through.
Add the Bok Choy and Chili Peppers: Add the bok choy and whole long green chili peppers to the pot. Continue to cook for an additional 5 minutes, or until the bok choy is wilted and tender.
Season the Soup: Season the soup with fish sauce and ground black pepper to taste. Adjust the seasoning as needed.
