Chicken with Tomato Soup

Ingredients
  

  • 1 lb. chicken cut into serving pieces
  • 4 tomatoes sliced into wedges
  • 1 Knorr Chicken Cube
  • 2 bunches bok choy
  • 3 long green chili peppers whole
  • 1 onion sliced
  • 3 thumbs of ginger crushed
  • 3 cloves garlic chopped
  • 2 cups water
  • 3 tablespoons cooking oil
  • Fish sauce and ground black pepper to taste

Instructions
 

  • Prepare the Ingredients: Wash and cut the chicken into serving pieces. Slice the tomatoes into wedges, and chop the onion and garlic. Crush the ginger slightly to release its flavor.
  • Sauté the Aromatics: Warm the cooking oil in a large pot over medium heat. Add the sliced onion, garlic, and crushed ginger. Sauté for about 2-3 minutes, or until the onions are translucent and the mixture is fragrant.
  • Add the Chicken: Add the chicken pieces to the pot. Cook for 5-7 minutes, stirring occasionally, until the chicken is lightly browned on all sides.
  • Add the Tomatoes and Chicken Cube: Add the sliced tomatoes and the Knorr Chicken Cube to the pot. Stir well to combine. Continue cooking for an additional 3 to 4 minutes, letting the tomatoes become tender and release their juices.
  • Pour in the Water:
  • Pour in the 2 cups of water and bring the soup to a boil. Once boiling, reduce the heat to a simmer and cook for 15-20 minutes, or until the chicken is tender and cooked through.
  • Add the Bok Choy and Chili Peppers: Add the bok choy and whole long green chili peppers to the pot. Continue to cook for an additional 5 minutes, or until the bok choy is wilted and tender.
  • Season the Soup: Season the soup with fish sauce and ground black pepper to taste. Adjust the seasoning as needed.
  • Serve: Ladle the hot soup into bowls and serve immediately. Enjoy this comforting soup on its own or with a side of steamed rice.
