Ingredients
  

  • 115 grams hot smoked salmon flaked
  • 25 grams red/Spanish onion very finely chopped
  • 2 tablespoons of Japanese-style mayonnaise like Kewpie.
  • 1 tablespoon lemon juice
  • Salt and cracked pepper to taste
  • 2 Lebanese cucumbers or small thin cucumbers washed and thinly sliced
  • 6 slices fresh white bread
  • 30 grams spreadable cream cheese

Instructions
 

  • Prepare the Salmon Filling: In a small bowl, combine the flaked hot smoked salmon, finely chopped red onion, Japanese mayonnaise, and lemon juice. Season with salt and cracked pepper to taste. Mix until well combined and creamy. Set aside.
  • Prepare the Cucumbers: With a sharp knife or mandoline, cut the cucumbers into thin slices. If desired, lightly salt the cucumber slices and set them aside on a paper towel to drain excess moisture. This will help keep the sandwiches from becoming soggy.
  • Prepare the Bread: Lay out the slices of fresh white bread on a clean surface. Spread a thin, even layer of cream cheese on one side of each slice. This will help to seal in the moisture and add a creamy texture to the sandwiches.
