  • 1 8-ounce package cream cheese, softened to room temperature
  • 1 10-ounce can Rotel diced tomatoes and green chilies, thoroughly drained

  • 2 cups shredded Mexican cheese blend

  • Preheat Oven: Preheat your oven to 350°F (175°C). Prepare a baking tray by lining it with parchment paper to ensure a hassle-free cleanup.
  • Drain Rotel: Thoroughly drain the Rotel tomatoes and green chilies to avoid adding excess moisture.
  • Combine Sausage and Cream Cheese: In a large mixing bowl, combine the uncooked sausage with the softened cream cheese. Mix until well incorporated.
  • Add Rotel and Cheese: Add the drained Rotel, Bisquick mix, and shredded Mexican cheese blend to the sausage mixture. Combine all the ingredients until a smooth dough forms, using your hands if necessary to ensure everything is well incorporated.
  • Shape the Mixture: Roll the mixture into 1-inch balls and place them on the prepared baking sheet, leaving a little space between each.
  • Bake: Place the sausage balls in the preheated oven and bake for 20–25 minutes, or until golden brown and cooked through.
  • Serve Warm: Transfer the sausage balls to a serving plate and serve warm. These are great with a side of dipping sauce like ranch or spicy mayo.
