  • In a large skillet, heat 2 tablespoons of avocado oil over medium heat until shimmering. Add 1 pound of ground chicken, diced red bell pepper, chopped white onion, and minced jalapeño. Cook for 7–8 minutes, stirring occasionally, until the chicken is browned and the vegetables are soft and fragrant.
  • Sprinkle in 1 teaspoon of garlic powder, 1 tablespoon of chili powder, 1 teaspoon of kosher salt, and 1 teaspoon of ground cumin to the chicken mixture. Stir well and sauté for another 1–2 minutes, allowing the spices to become aromatic and evenly coat the filling.
  • Add 2 cups of cooked rice, ½ cup of salsa verde, and 1 tablespoon of chipotle sauce to the skillet with the chicken mixture. Mix thoroughly to combine all ingredients and heat through for about 3–4 minutes.
  • Lay out 4 extra-large flour tortillas on a clean surface. Sprinkle a generous layer of shredded cheddar and Monterey Jack cheese onto the center of each tortilla. Spoon a portion of the chicken and rice filling on top of the cheese, then add a little more cheese.
  • Return the skillet to the heat and spray with a little oil. Place the assembled burritos seam-side down in the skillet. Toast over medium heat for about 3–4 minutes or until golden brown. Flip the burritos carefully and toast the other side for an additional 2–3 minutes.
  • Once the burritos are perfectly toasted, remove them from the skillet. Cut each burrito in half for easy serving and enjoy with your favorite dipping sauces.
