Ingredients

  • 2 sticks 8 ounces unsalted butter, softened
  • Approximately 2 cups of shredded Monterey Jack cheese weighing 8 ounces.
  • 2 cloves garlic minced
  • 1/2 cup mayonnaise
  • Two 4-ounce cans of mild diced green chiles like Hatch variety.
  • 1 teaspoon kosher salt
  • 1 24-inch French baguette

Instructions

  • Begin by preheating your oven : to 375°F (190°C) and preparing a baking sheet with parchment paper.
  • Prepare the Cheese Mixture: In a large bowl, combine the softened butter, shredded Monterey Jack cheese, minced garlic, mayonnaise, diced green chiles, and kosher salt. Mix until well combined, ensuring the butter and cheese are evenly distributed throughout the mixture.
  • Slice the Baguette: Slice the French baguette into 1/2-inch thick slices, either straight across or at a slight angle for larger pieces. Arrange the slices neatly on the lined baking sheet.
  • Assemble the Josephinas: Generously spread the cheese mixture onto each baguette slice, making sure to cover the surface well.
  • Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted, bubbly, and the edges of the bread are golden and crispy.
  • Serve: Remove from the oven and let the Josephinas cool for a minute or two before serving. Serve hot and watch them disappear quickly!
