  • 8 ounces tortellini use gluten-free tortellini if needed
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1 cup water or beef broth
  • 2 cups enchilada sauce or salsa
  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup corn fresh or frozen
  • 1 cup cheddar cheese or Monterey Jack, shredded
  • 1/4 cup sour cream
  • 2 green onions sliced (optional, for garnish)
  • 1 tablespoon cilantro chopped (optional, for garnish)

Instructions
 

  • Cook the Ground Beef: In a spacious skillet, brown the ground beef over medium heat, stirring occasionally to break it up as it cooks. Drain any excess fat.
  • Add Seasoning and Tortellini: Sprinkle the taco seasoning over the beef and stir to combine. Add the tortellini, water (or beef broth), enchilada sauce, black beans, and corn to the skillet. Stir everything together, ensuring the tortellini is submerged in the liquid.
  • Simmer: Increase the heat until the mixture reaches a rolling boil, then lower the temperature to simmer gently. Cover and let it simmer for about 10-12 minutes or until the tortellini is tender and cooked through, stirring occasionally.
  • Add the Cheese: Once the tortellini is cooked, sprinkle the shredded cheese evenly over the skillet. Cover and cook for an additional 2-3 minutes or until the cheese is melted and bubbly.
  • Garnish and Serve: Take it off the heat and garnish with a generous spoonful of sour cream. Garnish with sliced green onions and chopped cilantro, if desired. Serve hot and enjoy this cheesy, hearty skillet meal!
