  • In a large pot, bring salted water to a boil. Cook 8 ounces of pasta according to package instructions, typically 8-10 minutes. Reserve 1 cup of pasta cooking water before draining.
  • Add the cooked garlic from the chili oil to the skillet with the onions. Sauté for another 1-2 minutes, then add the drained pasta and mix well. Gradually pour in reserved pasta water until creamy.
  • Drizzle the chili oil over the pasta, toss to coat, adjusting heat level with more chili flakes if desired.
  • Plate the pasta and garnish with fresh herbs. Serve with side options like crusty bread or a light arugula salad.

Notes

Cook the onions on medium-low heat for the best caramelization. Always reserve some pasta cooking water to achieve a creamy sauce.
