For the Filling

  • 2 tbsp Fresh Sage Can replace with thyme or omit.
  • 1 large Honeycrisp Apple Swap with Granny Smith for tartness.
  • 2 medium Yellow Onions Can replace with red onions.
  • 8 oz Cheddar Cheese, grated Use a mix of cheeses or non-dairy.
  • 2 oz Brie Cheese, sliced Substitute with cream cheese if desired.

For Cooking

  • 6 tbsp Unsalted Butter Use salted butter and reduce added salt.
  • 1 tbsp Olive Oil Coconut oil can be used as a substitute.
  • 2 tsp Kosher Salt Use sea salt if unavailable.

Step-by-Step Instructions

  • Slice two yellow onions into ½ inch half moons, and caramelize in a skillet. Add unsalted butter and stir for about 10 minutes, then add salt and continue cooking until golden brown for 30-40 minutes.
  • Prepare sage butter by combining 4 tablespoons of softened unsalted butter with chopped sage and kosher salt in a small bowl, mixing until evenly distributed.
  • Assemble the sandwich with two slices of sourdough. Spread brie cheese on one slice, followed by grated cheddar, sliced apples, caramelized onions, and another layer of cheddar. Close the sandwich.
  • Heat olive oil in a skillet and grill the sandwich buttered-side down. Spread sage butter on top, grilling until golden brown, then flip and repeat.
  • Remove from the skillet, let cool for a minute, slice diagonally, and serve warm.

Notes

Serve with a light salad or warm soup for a complete meal. Store leftovers in the fridge for up to 3 days or freeze ungrilled sandwiches for 2 months.
