- 4 tablespoons butter divided in half
- 1 tablespoon olive oil
- 1 pound Yukon Gold or Red potatoes cut into ½-inch chunks
- 4 garlic cloves minced
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 ½ pounds of sirloin steak diced into 1-inch pieces
Prepare the Potatoes:
Heat 2 tablespoons of butter and the olive oil in a large skillet over medium heat.
Add the chopped potatoes and season with salt, pepper, oregano, and rosemary. Stir to coat the potatoes evenly with the butter and herbs.

When the skillet is heated, place the steak chunks in a single layer, ensuring the pan isn’t overcrowded.
Sear the steak bites for 2-3 minutes on each side, or until they reach your desired level of doneness (medium-rare to medium is ideal).
Remove the steak from the skillet and let it rest for a few minutes.
Combine and Serve:
Return the cooked potatoes to the skillet and give them a quick toss in the residual butter and steak juices for extra flavor.
