Ingredients
  

For the Chicken Filling

  • 2 cups shredded cooked chicken breast use any cooked chicken on hand
  • ½ cup buffalo sauce for less heat, opt for a milder sauce
  • 2 tablespoons butter can replace with olive oil
  • 1 teaspoon garlic powder substitute with fresh garlic if preferred
  • ½ teaspoon smoked paprika regular paprika can be used if needed
  • to taste salt and black pepper adjust according to preference

For the Toppings

  • ½ cup crumbled blue cheese or ranch dressing, feta can be substituted
  • ½ cup diced celery or diced cucumber for variation
  • ¼ cup diced red onion green onions can be used as a milder alternative
  • ¼ cup chopped fresh parsley basil or cilantro can be used as substitutes

For the Wraps

  • 8-10 butter lettuce leaves or romaine, any sturdy leafy green works

  • In a medium saucepan, combine ½ cup of buffalo sauce, 2 tablespoons of melted butter, 1 teaspoon of garlic powder, and ½ teaspoon of smoked paprika over low heat. Stir gently for 3-5 minutes until the mixture is smooth and fragrant.
  • Stir in 2 cups of shredded cooked chicken breast into the buffalo sauce, ensuring every piece is thoroughly coated. Allow the chicken to simmer for 2-3 minutes on low heat until heated through.
  • Remove the pan from heat and let it cool for about 2 minutes.
  • Lay out 8 to 10 butter lettuce leaves flat on a clean surface. Spoon about 2-3 tablespoons of the buffalo chicken mixture into each leaf.
  • Top each wrap with a sprinkle of diced celery, diced red onion, and crumbled blue cheese.
  • Sprinkle chopped fresh parsley on top of each filled lettuce wrap. Serve immediately.
