Ingredients
  

  • 1 pound 450 g of boneless, skinless chicken breasts
  • 1 cup of steamed and chopped broccoli florets
  • 1 cup of shredded cheddar cheese
  • ½ cup of softened cream cheese
  • ½ teaspoon of garlic powder
  • ½ teaspoon of onion powder
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika for seasoning the chicken
  • ½ cup of breadcrumbs optional, for topping

Instructions
 

Step 1: Prepare the Chicken

  • Preheat your oven to 375°F (190°C).
  • Place the chicken breasts between two sheets of plastic wrap and use a meat mallet to pound them to an even thickness, about ¼ inch thick.
  • Season the chicken breasts on both sides with salt, pepper, and paprika.

Step 2: Make the Filling

  • In a medium bowl, combine the chopped broccoli, shredded cheddar cheese, softened cream cheese, garlic powder, onion powder, salt, and pepper.
  • Mix until everything is evenly incorporated.

Step 3: Assemble the Rollups

  • Lay each chicken breast flat and spread an even amount of the broccoli-cheddar filling across the surface.
  • Carefully roll up the chicken breasts, tucking in the sides if needed, to enclose the filling.
  • Secure the rolls with toothpicks to keep them from unrolling during cooking.

Step 4: Cook the Chicken Rollups

  • In a spacious skillet that can go in the oven, warm the olive oil over a medium flame.
  • Brown the chicken rollups for 2-3 minutes on each side until golden.
  • If using breadcrumbs, sprinkle them over the top of the rollups for extra crunch.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked (internal temperature of 165°F/74°C).

Step 5: Serve

  • Remove the toothpicks from the chicken rollups and serve them hot. Enjoy these cheesy, broccoli-filled delights with your favorite side dishes!
