Salmon:
- 2 6-ounce salmon fillets, skin removed
- Coarse salt and black pepper to taste
Bourbon Peach Glaze:
- ¼ cup peach jam homemade preferred
- 2 tablespoons honey
- 1 tablespoon bourbon
- ¼ teaspoon garlic powder
- ⅛ teaspoon chipotle powder
Prepare the Salmon: Preheat your oven to 400°F (200°C). Season both sides of the salmon fillets with coarse salt and black pepper.
Make the Bourbon Peach Glaze: In a small saucepan, combine the peach jam, honey, bourbon, garlic powder, and chipotle powder. Cook over medium-low heat, stirring occasionally, until the mixture becomes smooth and begins to thicken slightly, about 3-5 minutes. Remove from heat and set aside.
Glaze and Bake the Salmon: Place the seasoned salmon fillets on a baking sheet lined with parchment paper or lightly greased. Brush a generous layer of the bourbon peach glaze over the salmon.
