Ingredients
  

  • 1/2 cup plain fat-free Greek yogurt
  • 1/4 cup of mayonnaise use full-fat for a creamier taste
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons thinly sliced green onions
  • 1 tablespoon minced parsley
  • Season with salt and freshly cracked black pepper according to your preference.
  • 3 cups of cooked chicken breast diced and chilled
  • 6 slices bacon cooked and chopped
  • 1 1/2 cups grape tomatoes halved
  • 1/2 cup diced celery
  • 1 medium avocado chopped into cubes (should be ripe yet slightly firm)
  • Romaine lettuce leaves for serving

Instructions
 

  • Prepare the dressing: In a large bowl, whisk together the Greek yogurt, mayonnaise, fresh lemon juice, green onions, parsley, salt, and freshly ground black pepper until well combined.
  • Add the chicken and veggies: Gently fold the diced chicken breast, chopped bacon, halved grape tomatoes, diced celery, and avocado into the dressing. Stir until everything is evenly coated with the creamy mixture.
  • Season to taste: Taste the chicken salad and adjust the seasoning with more salt, pepper, or lemon juice if desired.
  • Serve in lettuce leaves: Scoop the BLTA chicken salad into the Romaine lettuce leaves, using them as wraps. Serve immediately.
