Ingredients
  

For the Salad

  • 1 pound lean ground beef or turkey/plant-based crumbles for a lighter option
  • 8 ounces chickpea pasta or regular pasta for a non-gluten option
  • 1 pint grape tomatoes or cherry tomatoes/diced bell peppers
  • 2 cups romaine lettuce or spinach/mixed greens
  • 0.5 medium red onion or green onions/omit for milder taste
  • 1 cup sharp cheddar cheese or gouda/mozzarella
  • 4 pieces dill pickles or sweet pickles for milder salad

For the Dressing

  • 1 cup Greek yogurt or sour cream/vegan yogurt
  • 0.5 cup light mayonnaise or additional Greek yogurt
  • 0.25 cup no-sugar-added ketchup or regular ketchup
  • 1 tablespoon yellow mustard or Dijon mustard
  • 2 tablespoons dill pickle juice can omit if unavailable
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 1 tablespoon white sesame seeds optional for garnish

Instructions
 

Step-by-Step Instructions

  • In a large skillet, heat over medium heat and add lean ground beef. Cook for 6–8 minutes until browned. Stir in Worcestershire sauce, then remove from heat to cool.
  • Boil salted water and add chickpea pasta, cooking until al dente (7–10 minutes). Drain and rinse under cold water.
  • Wash and halve grape tomatoes, chop romaine lettuce, and finely dice red onion and dill pickles. Set aside.
  • Whisk Greek yogurt, light mayonnaise, ketchup, mustard, dill pickle juice, garlic powder, onion powder, and paprika in a medium bowl until smooth.
  • In a large bowl, combine chickpea pasta, ground beef, tomatoes, lettuce, onion, and pickles. Toss until evenly distributed. Pour dressing over salad and toss to coat.
  • Garnish with sesame seeds and serve immediately, or chill for 30 minutes to let flavors meld.

Notes

This salad can be stored in the refrigerator for 3-4 days, and for longer storage, freeze without lettuce and dressing.
