Ingredients

For the Meatball Subs

  • 3 hoagie rolls
  • 12-15 beef meatballs store-bought or homemade
  • 1-1.5 cups marinara sauce homemade or store-bought
  • 3 tablespoons freshly grated Parmesan cheese
  • 1-1.5 cups thick shredded mozzarella cheese
  • 2 teaspoons dried oregano

For Homemade Meatballs

  • 1 lb ground beef 85% lean
  • 1 egg
  • 1 thin slice of whole wheat bread soaked in milk and squeezed
  • 1/4 cup minced yellow onion
  • 1/4 cup freshly grated Parmesan cheese
  • 2 garlic cloves pressed
  • 1 tablespoon fresh minced basil
  • 1/2 tablespoon fresh minced parsley
  • 1/2-1 teaspoon kosher or sea salt to taste
  • 1/8-1/4 teaspoon black pepper to taste

Instructions

For the Homemade Meatballs

  • Soak the slice of whole wheat bread in a small bowl of milk for about 2 minutes. Squeeze out the excess liquid and set it aside.
  • In a large mixing bowl, combine the ground beef, soaked bread, egg, minced onion, Parmesan cheese, garlic, basil, parsley, salt, and pepper. Mix gently with clean hands or a spoon until just combined.
  • Roll the mixture into 1-inch meatballs, aiming for uniform size. You should get about 12-15 meatballs.

To cook the meatballs:

  • Pan-Frying Method: Heat a drizzle of olive oil in a skillet over medium heat. Cook the meatballs, turning occasionally, until browned on all sides, about 6-8 minutes.
  • Baking Method: Preheat your oven to 400°F (200°C). Place the meatballs on a greased baking sheet and bake for 15-20 minutes, or until fully cooked.
  • Set the cooked meatballs aside while you prepare the subs.

For Assembling the Meatball Subs

    Prepare the Hoagie Rolls

    • Cut the hoagie rolls lengthwise without cutting all the way through. Toast them lightly in the oven or on a grill pan to add texture.

    Heat the Marinara Sauce

    • Warm the marinara sauce in a small saucepan over low heat, stirring occasionally.

    Layer the Ingredients

    • Place 3-4 meatballs into each toasted hoagie roll.
    • Spoon marinara sauce generously over the meatballs.
    • Sprinkle freshly grated Parmesan cheese on top of the sauce.
    • Add a thick layer of shredded mozzarella cheese.
    • Sprinkle dried oregano over the cheese for added flavor.

    Melt the Cheese

    • Place the assembled subs on a baking sheet and broil them in the oven for 2-3 minutes, or until the cheese is melted and bubbly. Watch carefully to avoid burning.

    Serve and Enjoy

    • Remove the meatball subs from the oven, let them cool slightly, and serve warm. These subs are best enjoyed fresh and hot!
