Ingredients

  • 4 medium zucchinis
  • ½ tablespoon minced garlic
  • 1 tablespoon honey
  • ¼ cup soy sauce
  • 1 tablespoon teriyaki sauce
  • 2 green onions thinly sliced
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Zucchini

  • Heat the Oven: Set your oven to 400°F (200°C) to warm up.
  • Slice the Zucchini: Wash and trim the ends of the zucchinis. Slice them into rounds or half-moons, depending on your preference. Arrange the zucchini slices in a single layer on a baking sheet lined with parchment paper or lightly greased.

Step 2: Prepare the Sauce

  • Make the Sauce: In a small bowl, whisk together the minced garlic, honey, soy sauce, and teriyaki sauce until well combined.

Step 3: Season and Bake

  • Coat the Zucchini: Pour the sauce mixture over the zucchini slices, making sure each piece is coated evenly.
  • Bake the Zucchini: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the zucchini is tender and slightly golden around the edges.

Step 4: Garnish and Serve

  • Add Toppings: Once baked, remove the zucchini from the oven and sprinkle with thinly sliced green onions and sesame seeds for added texture and flavor.
  • Serve: Serve the baked zucchini warm as a side dish or over rice for a light meal.
