For the Apple Slaw Mix:
- 2 red firm apples (thinly sliced or julienned)
- 2 cups cabbage shredded
- 1 cup carrots shredded
- ⅓ cup celery thinly sliced
- ⅓ cup dried cranberries
- ⅓ cup sliced almonds
For the Slaw Dressing:
- ½ cup Greek yogurt
- ¼ cup mayonnaise
- 1 tablespoon apple cider vinegar
- 2 tablespoons honey
- 1 teaspoon Dijon mustard
- Salt to taste
- Freshly ground black pepper to taste
Prepare the Ingredients: Core and thinly slice the apples into matchstick shapes or julienne them for a neat presentation. Shred the cabbage and carrots if not pre-prepared. Thinly slice the celery.
Mix the Slaw Base: In a large mixing bowl, combine the apples, shredded cabbage, carrots, celery, dried cranberries, and sliced almonds. Toss gently to mix the ingredients evenly.
Make the Dressing: In a smaller bowl, blend the Greek yogurt, mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until the mixture is silky and well-combined. Adjust seasoning to taste.
