- 1 large onion diced
- 1 red bell pepper diced
- 1 green bell pepper diced
- 1 medium zucchini diced
- 1 medium eggplant diced
- 4 medium-sized tomatoes chopped (or 1 can of diced tomatoes)
- 3 cloves garlic minced
- 4 tbsp olive oil
- Salt and pepper to taste
- 1 tsp smoked paprika
- Chopped fresh parsley or basil for a finishing touch
Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat.
Sauté the Aromatics: Add the diced onion and cook for about 3-4 minutes until softened. Incorporate the garlic and sauté for an additional minute until it becomes aromatic.
