Step-by-Step Instructions

  • Preheat your oven to 150°C (300°F) and line two baking trays with parchment paper.
  • In a mixing bowl, whip egg whites and a pinch of salt until soft peaks form. Gradually add granulated sugar until stiff peaks form.
  • Sift in powdered sugar, finely ground almonds, and cornstarch into the whipped egg whites, and gently fold to combine.
  • Transfer the meringue mixture to a piping bag and pipe discs onto the prepared trays, spacing them at least 3 cm apart.
  • Bake the meringue discs for 40-45 minutes until firm and slightly crisp on the outside. Cool with the oven door ajar.
  • Whip heavy cream with powdered sugar and vanilla extract until soft peaks form, then gently fold in toasted sliced almonds.
  • Spread or pipe cream filling onto half of the meringue discs and top with remaining discs to create sandwiches.
  • Dust finished cookies with powdered sugar and scatter sliced almonds before serving.
