Steak and Marinade:
- 2 - 2 ½ pounds flank steak cut into 6 pieces
- Kosher salt and black pepper to taste
- ½ cup tamari sauce
- 2 cloves garlic crushed
Vegetables:
- 1 pound asparagus trimmed
- 3 bell peppers seeded and sliced thinly
Sauce:
- ¼ cup balsamic vinegar
- ⅓ cup beef broth
- 2 tablespoons unsalted butter
Prepare the Steak and Marinade:
In a shallow dish, season the flank steak pieces with kosher salt and black pepper.
In a small bowl, mix tamari sauce and crushed garlic. Pour this mixture over the steak, ensuring that all the pieces are well-coated. Cover and let the steak marinate for at least 30 minutes, or refrigerate for up to 2 hours for a deeper flavor.
Assemble the Bundles:
While the steak is marinating, prepare the vegetables. Trim the asparagus and slice the bell peppers thinly.
Take one piece of marinated steak and place a few asparagus stalks and slices of bell peppers in the center. Roll the steak around the vegetables to form a bundle, and secure it with toothpicks if necessary. Repeat this for all the steak pieces.
Air Fry the Bundles:
Preheat your air fryer to 400°F (200°C).
Lightly spray the air fryer basket with olive oil. Place the steak and asparagus bundles in the basket, leaving a little space between each bundle.
Air fry the bundles for 8-10 minutes, flipping halfway through, until the steak is cooked to your desired doneness and the vegetables are tender.
Prepare the Sauce:
While the bundles are air frying, make the sauce. In a small saucepan, combine balsamic vinegar, beef broth, and unsalted butter. Bring to a simmer over medium heat and cook for 3-5 minutes, stirring occasionally until the sauce has slightly thickened.
