Ingredients
  

Steak and Marinade:

  • 2 - 2 ½ pounds flank steak cut into 6 pieces
  • Kosher salt and black pepper to taste
  • ½ cup tamari sauce
  • 2 cloves garlic crushed

Vegetables:

  • 1 pound asparagus trimmed
  • 3 bell peppers seeded and sliced thinly

Sauce:

  • ¼ cup balsamic vinegar
  • ⅓ cup beef broth
  • 2 tablespoons unsalted butter

For Air Frying:

  • Olive oil spray

Prepare the Steak and Marinade:

  • In a shallow dish, season the flank steak pieces with kosher salt and black pepper.
  • In a small bowl, mix tamari sauce and crushed garlic. Pour this mixture over the steak, ensuring that all the pieces are well-coated. Cover and let the steak marinate for at least 30 minutes, or refrigerate for up to 2 hours for a deeper flavor.

Assemble the Bundles:

  • While the steak is marinating, prepare the vegetables. Trim the asparagus and slice the bell peppers thinly.
  • Take one piece of marinated steak and place a few asparagus stalks and slices of bell peppers in the center. Roll the steak around the vegetables to form a bundle, and secure it with toothpicks if necessary. Repeat this for all the steak pieces.

Air Fry the Bundles:

  • Preheat your air fryer to 400°F (200°C).
  • Lightly spray the air fryer basket with olive oil. Place the steak and asparagus bundles in the basket, leaving a little space between each bundle.
  • Air fry the bundles for 8-10 minutes, flipping halfway through, until the steak is cooked to your desired doneness and the vegetables are tender.

Prepare the Sauce:

  • While the bundles are air frying, make the sauce. In a small saucepan, combine balsamic vinegar, beef broth, and unsalted butter. Bring to a simmer over medium heat and cook for 3-5 minutes, stirring occasionally until the sauce has slightly thickened.

Serve:

  • Once the steak and asparagus bundles are done, drizzle them with the balsamic sauce. Serve hot and enjoy this savory, healthy meal with your favorite side dishes or as a standalone entrée.
