For the Balsamic Vinaigrette

Instructions
 

Step-by-Step Instructions

  • In a medium bowl or a jar, combine ¼ cup olive oil, 2 tablespoons balsamic vinegar, 1 tablespoon lemon juice, ½ teaspoon garlic powder, 1 tablespoon honey, and a pinch of salt and pepper. Whisk vigorously or seal the jar and shake until well blended, about 30 seconds. Set aside.
  • In a large serving bowl, add 6 cups of washed baby spinach, inspecting the leaves for any wilted or discolored pieces.
  • Add 1 cup of fresh blueberries, slice 1 ripe avocado and add it, along with ½ cup of crumbled goat cheese and ½ cup of raw walnuts.
  • Finely chop about ¼ cup of fresh mint leaves and sprinkle them over the salad mixture. Gently toss everything together.
  • Pour the prepared vinaigrette over the salad and toss gently until everything is coated.
  • Serve immediately to enjoy the best texture and flavor.
