Ingredients
  

  • 1 head of green leaf lettuce roughly chopped (approximately 4–5 cups)
  • ½ cup diced green bell pepper
  • 1 cup diced English cucumber
  • ½ cup halved cherry tomatoes
  • cup diced red onion
  • ¼ cup unsalted sunflower seeds
  • 1 avocado sliced
  • For the Green Goddess Salad Dressing:
  • ½ cup Greek yogurt or mayonnaise
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh basil chopped
  • 2 tablespoons fresh chives chopped
  • 1 tablespoon lemon juice
  • 1 small clove garlic minced
  • 1 teaspoon Dijon mustard
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions
 

  • Prepare the Salad:
  • o In a large salad bowl, combine the chopped green leaf lettuce, diced green pepper, diced cucumber, halved cherry tomatoes, and diced red onion.
  • o Toss gently to mix the ingredients evenly.
  • Make the Green Goddess Dressing:
  • o In a blender or food processor, combine the Greek yogurt (or mayonnaise), fresh parsley, basil, chives, lemon juice, minced garlic, Dijon mustard, and olive oil.
  • o Blend until smooth and creamy. Season with salt and pepper to taste.
  • o If the dressing is too thick, add a little water or more lemon juice to reach your desired consistency.
  • Assemble the Salad:
  • o Pour the Green Goddess dressing over the salad and toss until all the ingredients are well coated.
