Ingredients
  

For the Stir-Fry:

  • 3 organic chicken breasts chopped into 1 ½-inch chunks
  • 3 cups fresh broccoli florets
  • 1 tablespoon of olive oil or avocado oil

For the Teriyaki Sauce:

  • ¼ cup tamari or use low-sodium soy sauce or liquid aminos
  • 3 tbsp coconut sugar
  • 1 tbsp sesame oil
  • 1 teaspoon of grated ginger fresh or dried
  • 2 tsp cornstarch
  • 2 garlic cloves minced
  • A hearty sprinkle of red pepper flakes optional, for added spice
  • ½ tsp sesame seeds optional, for garnish

Instructions
 

Prepare the Sauce:

  • In a small bowl, whisk together the tamari (or soy sauce), coconut sugar, sesame oil, ginger, cornstarch, minced garlic, and red pepper flakes (if using). Set aside.

Cook the Chicken:

  • Heat 1 tablespoon of olive oil or avocado oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 5-6 minutes, stirring frequently until the chicken is browned and cooked through.

Add the Broccoli:

  • Add the fresh broccoli florets to the skillet and stir-fry for another 2-3 minutes, until the broccoli turns bright green and becomes slightly tender but still crisp.

Add the Teriyaki Sauce:

  • Pour the prepared teriyaki sauce over the chicken and broccoli, stirring to coat everything evenly. Let the sauce simmer for 1-2 minutes, allowing it to thicken slightly and fully cover the chicken and vegetables.
