Ingredients
For the Salad:
- 600g potatoes (Yukon Gold or Red Bliss, cooked and sliced)
- 300g red cabbage (thinly shredded)
- 1 large onion (finely diced)
- 6 pickled cucumbers (gherkin-style, finely chopped)
- 200g canned peas (drained and rinsed)
- Salt & black pepper to taste
Optional Dressing:
- 2 tbsp olive oil
- 1 tbsp pickle juice or apple cider vinegar
- 1 tsp mustard (Dijon or German-style)
Instructions
1. Cook the Potatoes
- Wash the potatoes and boil them with the skins on for 15-20 minutes.
- Once tender, drain and let them cool before slicing.
2. Prepare the Cabbage & Onion
- Shred the red cabbage finely and place it in a large bowl.
- Dice the onion and mix it with the cabbage.
3. Chop the Pickles
- Finely chop pickled cucumbers and add them to the bowl.
4. Add the Peas
- Drain and rinse canned peas before adding them to the mixture.
5. Assemble the Salad
- Add the sliced potatoes and gently mix all ingredients.
- Season with salt and black pepper to taste.
6. Optional Dressing
- Mix olive oil, pickle juice, and mustard in a small bowl.
- Drizzle over the salad and toss to combine.
7. Let It Rest & Serve
- Refrigerate for at least 30 minutes to enhance the flavors.
- Serve chilled or at room temperature.
