Description

A spinach frittata is a simple, delicious, and protein-packed dish perfect for breakfast, brunch, or a light dinner. Made with eggs, fresh spinach, garlic, and parmesan cheese, this classic Italian recipe is both nutritious and satisfying. It’s low-carb, gluten-free, and meal-prep friendly, making it a great choice for any day of the week!

Ingredients

Scale
  • 8 large eggs
  • 200g fresh spinach, roughly chopped
  • 1 cup grated parmesan cheese (or Parmigiano-Reggiano)
  • 3 cloves garlic, minced
  • 2 tsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

1. Prepare the Ingredients

  • Wash and roughly chop the spinach.
  • Mince the garlic cloves.
  • Grate the parmesan cheese if needed.

2. Sauté the Spinach and Garlic

  • Heat 2 tsp olive oil in an oven-safe skillet over medium heat.
  • Add the minced garlic and sauté for 1 minute until fragrant.
  • Add the chopped spinach and cook for 3-4 minutes, stirring frequently, until wilted.
  • Season with salt and black pepper.

3. Prepare the Egg Mixture

  • In a large bowl, whisk the eggs until smooth.
  • Stir in the grated parmesan cheese.
  • Add the sautéed spinach and garlic, mixing well.

4. Cook on the Stovetop

  • Preheat your oven to 375°F (190°C).
  • Pour the egg mixture into the same skillet, spreading evenly.
  • Cook over medium heat for 5-7 minutes, until the edges start to set but the center remains slightly runny.

5. Bake the Frittata

  • Transfer the skillet to the oven and bake for 10-15 minutes, until the frittata is fully set and lightly golden.
  • To check doneness, insert a knife in the center—if it comes out clean, it’s ready.
  • For a golden-brown top, broil for 1-2 minutes, watching closely.

6. Serve & Enjoy

  • Let the frittata cool slightly before slicing.
  • Serve warm or at room temperature.

Notes

  • Use fresh spinach for the best texture and flavor.
  • Don’t overcook—a soft, creamy texture is key.
  • Let it cool before slicing for cleaner cuts.
  • Add toppings like feta, cherry tomatoes, or mushrooms for variety.
