Description

Juicy, flavorful, and packed with a kick, these Spicy Turkey and Zucchini Burgers are the perfect combination of lean protein and wholesome vegetables. Easy to make and customizable, they’re great for a weeknight meal, low-carb option, or backyard cookout.

Ingredients

Scale
  • 500 g ground turkey
  • 1 medium zucchini (grated (about 150g))
  • ¼ cup breadcrumbs (about 30g)
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (adjust to taste for heat)
  • Salt and black pepper (to taste)
  • 1 tablespoon olive oil (for cooking)
  • 1 tablespoon fresh parsley (chopped (optional for garnish))

Instructions

  1. Prepare the Mixture: In a large bowl, combine ground turkey, grated zucchini, breadcrumbs, egg, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Mix gently until well combined.
  2. Shape the Patties: Divide the mixture into 4–6 portions, depending on your preferred burger size, and shape them into patties about 1-inch thick.
  3. Cook the Burgers: Heat olive oil in a large skillet or grill pan over medium heat. Add the patties and cook for 4–5 minutes on each side, or until golden brown and fully cooked through (internal temperature of 165°F/74°C).
  4. Garnish and Serve: Sprinkle freshly chopped parsley on top for added flavor and serve. Pair the burgers with buns, lettuce wraps, or a side of roasted veggies for a complete meal.

Notes

  • Zucchini Prep: Squeeze out excess moisture from grated zucchini using a clean kitchen towel to avoid soggy patties.
  • Heat Adjustment: Modify the cayenne pepper to control spice levels.
  • Storage: Cooked patties can be stored in the fridge for up to 3 days or frozen for up to 3 months. Reheat on a skillet for the best texture.
  • Baking Option: For a healthier method, bake patties at 375°F (190°C) on a parchment-lined baking sheet for 20–25 minutes, flipping halfway.
