Instructions
- Heat the Oil: In a large skillet, heat the olive oil over medium heat until shimmering.

- Add the Garlic: Stir in the minced garlic and cook for about 1 minute, or until fragrant. Be careful not to burn the garlic.
- Wilt the Spinach: Add the spinach to the skillet in batches, allowing it to wilt slightly before adding more. Stir gently to combine the spinach with the carrots and garlic.
- Season: Sprinkle the dish with salt, pepper, and oregano (if using). Toss to evenly distribute the seasoning.
- Finish with Lemon Juice: If desired, drizzle with lemon juice for a bright, tangy finish.
