Savor the perfect blend of crispy sourdough bread, gooey melted cheeses, and savory garlic-infused mushrooms with this Garlic Mushroom Grilled Cheese. A gourmet twist on a classic, this sandwich is a flavor-packed indulgence you’ll love for lunch, dinner, or a quick snack.

Ingredients

Scale
  • 1 tbsp olive oil
  • 250g (½ lb) mushrooms, sliced
  • 2 tbsp butter
  • 2 garlic cloves, crushed
  • ½ tsp chili flakes (optional)
  • 1 tsp dried oregano
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 8 slices sourdough bread
  • 1 cup grated mozzarella cheese
  • 1 cup grated sharp or mature cheddar cheese
  • Extra butter for grilling

Instructions

  • Sauté the Mushrooms: Heat olive oil in a skillet over medium heat. Add sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until golden brown and tender.

  • Prepare the Garlic Mushroom Mixture: Stir in the butter, crushed garlic, chili flakes (if using), oregano, and lemon juice. Season with salt and pepper. Cook for another 2-3 minutes until fragrant. Remove from heat and set aside.

  • Assemble the Sandwiches: Lay out 4 slices of sourdough bread. Evenly spread the garlic mushroom mixture on top of each slice. Sprinkle grated mozzarella and cheddar cheese over the mushrooms. Top with the remaining 4 slices of bread to form sandwiches.

  • Grill the Sandwiches: Heat a skillet or griddle over medium heat and melt a little butter. Place the sandwiches in the skillet and grill for 3-4 minutes on each side until the bread is golden brown and the cheese is melted.

  • Serve and Enjoy: Remove the sandwiches from the skillet and let cool slightly. Slice diagonally and serve hot with your favorite side dish or dipping sauce.

Notes

  • Use fresh mushrooms and garlic for the best flavor.
  • Grate your own cheese for optimal meltiness and taste.
  • Adjust the chili flakes for a spicier or milder profile.
  • Store leftover garlic mushroom mixture in the fridge for up to 2 days for easy meal prep.
