Ingredients
- 1 tbsp olive oil
- 250g (½ lb) mushrooms, sliced
- 2 tbsp butter
- 2 garlic cloves, crushed
- ½ tsp chili flakes (optional)
- 1 tsp dried oregano
- 1 tsp lemon juice
- Salt and pepper to taste
- 8 slices sourdough bread
- 1 cup grated mozzarella cheese
- 1 cup grated sharp or mature cheddar cheese
- Extra butter for grilling
Instructions
-
Sauté the Mushrooms: Heat olive oil in a skillet over medium heat. Add sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until golden brown and tender.
-
Prepare the Garlic Mushroom Mixture: Stir in the butter, crushed garlic, chili flakes (if using), oregano, and lemon juice. Season with salt and pepper. Cook for another 2-3 minutes until fragrant. Remove from heat and set aside.
-
Assemble the Sandwiches: Lay out 4 slices of sourdough bread. Evenly spread the garlic mushroom mixture on top of each slice. Sprinkle grated mozzarella and cheddar cheese over the mushrooms. Top with the remaining 4 slices of bread to form sandwiches.
-
Grill the Sandwiches: Heat a skillet or griddle over medium heat and melt a little butter. Place the sandwiches in the skillet and grill for 3-4 minutes on each side until the bread is golden brown and the cheese is melted.
-
Serve and Enjoy: Remove the sandwiches from the skillet and let cool slightly. Slice diagonally and serve hot with your favorite side dish or dipping sauce.

- Use fresh mushrooms and garlic for the best flavor.
