  • 1 clove garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 100g (3.5 oz) cheese, grated
  • 2 tablespoons flour
  • Olive oil, for frying

Instructions

  • Prepare the Vegetables

    • Wash and grate the zucchini, carrot, and potato.
    • Squeeze out excess moisture using a kitchen towel.
  • Mix the Ingredients

    • In a large bowl, combine grated vegetables with eggs, oatmeal, salt, pepper, Italian herbs, garlic, parsley, cheese, and flour.
    • Mix until the ingredients form a well-combined mixture.
  • Shape the Patties

    • Take a handful of the mixture and shape it into small round patties.
  • Cook the Patties

    • Heat olive oil in a skillet over medium heat.
