- 2 round thin lavash
- 6 eggs

- 2 small tomatoes, chopped

- Green onions, chopped
- Salt, to taste
- Ground black pepper, to taste
- Vegetable oil, for frying
Instructions
1. Prepare the Filling
- Crack 6 eggs into a bowl and whisk them well.
- Season with salt and black pepper to taste.
- Heat a non-stick pan over medium heat, add a little vegetable oil, and scramble the eggs until just set.
- Remove from heat and set aside.
2. Prepare the Lavash
- Lay the lavash on a clean surface.
- If the lavash is dry, lightly brush it with a bit of water or oil to soften it.
3. Layer the Ingredients
- Spread the scrambled eggs evenly over each lavash.
- Add a layer of chopped smoked turkey.
- Sprinkle grated cheese over the eggs and turkey.
- Top with chopped tomatoes, parsley, and green onions.
4. Roll the Lavash
- Roll the lavash gently but firmly from one end to the other, making sure to tuck in the filling as you go.
- If needed, secure the roll with a toothpick to keep it intact.
5. Toast the Lavash Roll
- Heat a pan with vegetable oil over medium heat.
- Place the rolled lavash seam-side down in the pan.
- Cook for 2-3 minutes on each side until the lavash is golden brown and crispy.
- The cheese inside should be melted and gooey.

- Remove the lavash rolls from the pan and let them cool slightly.
