Ingredients

- 1 1/2 cups milk
- 2 large egg yolks
- 1/3 cup heavy cream
- 1 cup frozen peas
- 1 cup diced pimientos, drained
- 4 cups cooked chicken, chopped or shredded
Instructions
1. Prep Ingredients: Chop the cooked chicken, slice the mushrooms, and measure all ingredients. This makes the cooking process smooth and efficient.
2. Sauté Mushrooms: In a large skillet, melt the butter over medium heat. Add the sliced mushrooms and cook for 5–7 minutes until golden and tender. Remove the mushrooms and set them aside.
3. Make the Roux: In the same skillet, whisk the flour into the melted butter, stirring constantly for about 2 minutes to create a smooth roux.
4. Prepare the Sauce: Gradually pour in the chicken broth while whisking to prevent lumps. Add the milk and continue to whisk until the mixture thickens, about 5 minutes.
5. Temper the Egg Yolks: In a small bowl, whisk the egg yolks with the heavy cream. Slowly add a ladle of the hot sauce into the egg mixture, whisking constantly to temper the yolks. Then pour the tempered yolks back into the skillet, stirring well.
6. Add Vegetables: Stir in the frozen peas and diced pimientos. Allow them to heat through for 2–3 minutes.
7. Incorporate the Chicken and Mushrooms: Add the cooked chicken and sautéed mushrooms back into the skillet. Stir until everything is well coated in the creamy sauce. Let it simmer on low heat for about 5 minutes.
8. Serve Hot: Serve the Chicken a la King over toast, puff pastry, rice, or noodles. Garnish with fresh parsley for added flavor and color.
