  • 300g all-purpose flour
  • 2 eggs, beaten
  • Salt & black pepper, to taste
  • Oil for frying (vegetable or canola works well)

Instructions

1. Prepare the Batter

  • In a large mixing bowl, beat the eggs lightly.
  • Stir in the grated cheese, salt, and black pepper.
  • Gradually add the flour, mixing until the batter is smooth and thick.
  • If the batter is too thick, add a splash of water or milk to adjust consistency.

2. Prepare the Zucchini

  • Wash the zucchinis and cut them into ¼-inch thick rounds.
  • Pat dry with a paper towel to remove excess moisture—this helps them get crispy.

3. Heat the Oil

  • Pour enough oil into a frying pan to coat the bottom.
  • Heat over medium heat until the oil is hot but not smoking.

4. Coat & Fry the Zucchini

  • Dip each zucchini round into the batter, making sure it’s evenly coated.
  • Carefully place in the hot oil and fry for 2-3 minutes per side, until golden brown and crispy.
  • Fry in batches to prevent overcrowding and ensure even cooking.

5. Drain & Serve

  • Transfer the fried zucchini rounds to a plate lined with paper towels to drain excess oil.
