Ingredients
- 2 medium zucchinis, sliced into rounds
- 150g cheese, grated (mozzarella, cheddar, or a mix)
- 300g all-purpose flour
- 2 eggs, beaten
- Salt & black pepper, to taste
- Oil for frying (vegetable or canola works well)
Instructions
1. Prepare the Batter
- In a large mixing bowl, beat the eggs lightly.
- Stir in the grated cheese, salt, and black pepper.
- Gradually add the flour, mixing until the batter is smooth and thick.
- If the batter is too thick, add a splash of water or milk to adjust consistency.
2. Prepare the Zucchini
- Wash the zucchinis and cut them into ¼-inch thick rounds.
- Pat dry with a paper towel to remove excess moisture—this helps them get crispy.
3. Heat the Oil
- Pour enough oil into a frying pan to coat the bottom.
- Heat over medium heat until the oil is hot but not smoking.
4. Coat & Fry the Zucchini
- Dip each zucchini round into the batter, making sure it’s evenly coated.
- Carefully place in the hot oil and fry for 2-3 minutes per side, until golden brown and crispy.
- Fry in batches to prevent overcrowding and ensure even cooking.
5. Drain & Serve
- Transfer the fried zucchini rounds to a plate lined with paper towels to drain excess oil.
- Serve hot with your favorite dipping sauce!
