  • 2 medium-large zucchinis, grated (about 2 cups)
  • ¼ cup finely sliced scallions (green onions)
  • 2 large eggs
  • 1 cup cooked brown lentils, drained (red lentils can also be used)
  • ½ cup all-purpose flour
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 tablespoons extra virgin olive oil

Instructions

  • Prepare the Zucchini – Grate the zucchinis and sprinkle with a pinch of salt. Let sit for 10 minutes to release excess moisture. Use a kitchen towel or cheesecloth to squeeze out as much water as possible.
  • Mix the Ingredients – In a large mixing bowl, combine zucchini, scallions, lentils, eggs, flour, Parmesan, oregano, black pepper, and salt. Stir well until fully mixed.
  • Form the Fritters – Heat 2 tablespoons of olive oil in a large skillet over medium heat. Scoop small portions of the mixture and form them into patties.
  • Cook Until Golden Brown – Place the fritters in the hot skillet and cook for 3-4 minutes per side or until golden and crispy. Transfer to a paper towel-lined plate to absorb excess oil.
  • Serve & Enjoy – Serve hot with a side of yogurt sauce, tzatziki, or a squeeze of fresh lemon juice.
