Ingredients

  • 2 medium zucchinis, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 1 tablespoon olive oil


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet, cooking until browned and fully cooked. Drain any excess fat.
  4. Stir in the sliced zucchini, diced tomatoes (with their juice), Italian seasoning, salt, and black pepper. Cook for an additional 5-7 minutes until the zucchini is slightly tender.
  5. Transfer the mixture to a greased 9×13-inch baking dish.
  6. Sprinkle the shredded cheddar cheese evenly over the top.
  7. In a small bowl, mix the breadcrumbs with a little olive oil, then sprinkle over the cheese layer.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the breadcrumbs are golden brown.
  9. Let the casserole cool for 5 minutes before serving.
