Description

A delicious and savory Zucchini Cheese Bread that combines the flavors of zucchini, cheddar, and Parmesan cheese, perfect for a snack or side dish.


Ingredients

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1/4 cup olive oil
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
  3. In another bowl, whisk together the flour, baking powder, baking soda, garlic powder, onion powder, black pepper, and crushed red pepper flakes (if using).
  4. In a separate bowl, beat the eggs, then add the olive oil and milk. Mix until well combined.
  5. Stir the dry ingredients into the wet ingredients until just combined. Fold in the squeezed zucchini, cheddar cheese, Parmesan cheese, and parsley (if using) until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
