For the Fritters:

- Salt (to taste)
- 2 zucchini (grated)
- 1 onion (finely chopped)
- 1 egg (beaten)
- 1/2 tablespoon red sweet ground pepper
- 1/2 tablespoon red hot pepper (adjust to taste)
- 2 tablespoons wheat flour (20 g)
- Cooking oil (for frying)
For the Garlic Yogurt Sauce:
- Yogurt (as needed)
- 1 –2 garlic cloves (minced)
- A pinch of salt
Instructions
- Cook the Rice : Rinse the rice and cook it in salted boiling water according to package instructions. Drain and allow it to cool.
- Prepare the Zucchini : Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Squeeze out the excess moisture to prevent the fritters from being soggy.
- Mix the Fritter Ingredients : In a large bowl, combine the cooked rice, grated zucchini, chopped onion, beaten egg, red sweet pepper, red hot pepper, and flour. Mix well to form a slightly sticky batter. Season with salt to taste.
- Shape the Fritters : Scoop small portions of the mixture and shape them into patties.
- Fry the Fritters : Heat cooking oil in a skillet over medium heat. Fry the fritters for 3–4 minutes on each side, or until golden brown and crispy. Transfer to a plate lined with paper towels to drain excess oil.
- Prepare the Sauce : In a small bowl, mix yogurt with minced garlic and a pinch of salt. Stir until smooth and well combined. Adjust garlic to taste.
- Chill : Refrigerate the sauce until ready to serve, allowing the flavors to meld.
- Serve : Serve the crispy fritters warm, paired with the garlic yogurt sauce for dipping. Garnish with fresh herbs like parsley or dill, if desired.
