  • Salt (to taste)
  • 2 zucchini (grated)
  • 1 onion (finely chopped)
  • 1 egg (beaten)
  • 1/2 tablespoon red sweet ground pepper
  • 1/2 tablespoon red hot pepper (adjust to taste)
  • 2 tablespoons wheat flour (20 g)
  • Cooking oil (for frying)

For the Garlic Yogurt Sauce:

  • Yogurt (as needed)
  • 12 garlic cloves (minced)
  • A pinch of salt

Instructions

  1. Cook the Rice : Rinse the rice and cook it in salted boiling water according to package instructions. Drain and allow it to cool.
  2. Prepare the Zucchini : Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Squeeze out the excess moisture to prevent the fritters from being soggy.
  3. Mix the Fritter Ingredients : In a large bowl, combine the cooked rice, grated zucchini, chopped onion, beaten egg, red sweet pepper, red hot pepper, and flour. Mix well to form a slightly sticky batter. Season with salt to taste.
  4. Shape the Fritters : Scoop small portions of the mixture and shape them into patties.
  5. Fry the Fritters : Heat cooking oil in a skillet over medium heat. Fry the fritters for 3–4 minutes on each side, or until golden brown and crispy. Transfer to a plate lined with paper towels to drain excess oil.
  6. Prepare the Sauce : In a small bowl, mix yogurt with minced garlic and a pinch of salt. Stir until smooth and well combined. Adjust garlic to taste.
  7. Chill : Refrigerate the sauce until ready to serve, allowing the flavors to meld.
  8. Serve : Serve the crispy fritters warm, paired with the garlic yogurt sauce for dipping. Garnish with fresh herbs like parsley or dill, if desired.
