For the Zucchini

  • 5 small to medium zucchini, cut in half lengthwise
  • 1 tablespoon canola oil (or any neutral oil)
  • ¾ teaspoon cooking/kosher salt
  • ¼ cup crispy fried shallots (store-bought)
  • 1 green onion stem, finely sliced

For the Spicy Sauce

  • 1 tablespoon canola oil (or any neutral oil)
  • 3 garlic cloves, finely minced
  • 1 tablespoon sambal oelek (or substitute sriracha or chili crisp)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon light soy sauce
  • 2 tablespoons mirin (or substitute honey)

Instructions

  • Preheat the Oven – Set your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

  • Prepare the Zucchini – Cut the zucchini in half lengthwise and place them on the baking sheet, cut side up. Brush with 1 tablespoon of canola oil and sprinkle evenly with ¾ teaspoon of salt.

  • Roast the Zucchini – Bake for 20-25 minutes or until tender and slightly golden around the edges.

  • Make the Spicy Sauce – While the zucchini is roasting, heat 1 tablespoon of canola oil in a small pan over medium heat. Add the minced garlic and sauté for about one minute until fragrant. Stir in the sambal oelek, toasted sesame oil, soy sauce, and mirin. Cook for another 1-2 minutes, then remove from heat.

  • Assemble the Dish – Transfer the roasted zucchini to a serving platter. Drizzle the spicy sauce evenly over each piece.

  • Garnish and Serve – Sprinkle crispy fried shallots and sliced green onions over the top for extra crunch and flavor. Serve hot.
