Ingredients

Scale
  • 6 large eggs
  • 1 cup milk (whole, skim, almond, or soy)
  • 1 cup mixed shredded cheese (Monterey Jack & Colby)
  • 1 cup fresh spinach, chopped
  • 1/2 cup finely diced mixed bell peppers (red, yellow, green)
  • 1/2 cup diced onion
  • 1/2 cup cherry tomatoes, halved
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika (optional)

Optional Garnishes

  • Fresh herbs like parsley or basil
  • A sprinkle of red pepper flakes for heat
  • Toasted breadcrumbs for a crispy top

Instructions

  • Preheat & Prepare: Preheat the oven to 375°F (190°C). Lightly grease a medium-sized baking dish with oil or cooking spray.

  • Whisk Eggs & Milk: In a large mixing bowl, whisk together eggs and milk until fully combined.

  • Add Vegetables & Cheese: Stir in chopped spinach, diced bell peppers, onion, and cherry tomatoes. Add the shredded cheese, reserving some for the top.

  • Season the Mixture: Add salt, black pepper, garlic powder, and paprika. Mix well so the flavors are evenly distributed.

  • Pour & Top: Pour the mixture into the greased baking dish and sprinkle the reserved cheese on top.

  • Bake Until Set: Bake for 25-30 minutes or until the eggs are fully set and the top is golden.

  • Cool & Serve: Let the bake cool for a few minutes before slicing. Serve warm with fresh herbs or toasted breadcrumbs if desired.

Notes

  • Drain excess moisture from spinach and tomatoes to prevent a watery bake.
  • Use different cheeses like cheddar, feta, or Swiss for unique flavors.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Freeze individual portions for up to 3 months—perfect for meal prep!
  • Reheat in the oven at 350°F (175°C) for 5-7 minutes or in the microwave for 30 seconds.
