Final Additions:

  • ¾ cup alphabet noodles
  • ½ cup frozen corn
  • ½ cup frozen green beans
  • 2 tablespoons chopped fresh parsley

Instructions

  • Warm the Olive Oil: In a large pot, heat the olive oil over medium heat.

  • Cook the Aromatics: Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until softened.

  • Brown the Beef: Add the ground beef to the pot and break it up with a spoon. Cook until fully browned, about 5 minutes. Drain excess fat if needed.

  • Add Garlic and Seasoning: Stir in the minced garlic and cook for 1 minute. Season with salt and black pepper.

  • Incorporate Tomatoes and Sauce: Pour in the diced tomatoes (with juice) and tomato sauce. Stir in the dried Italian seasoning.

  • Simmer with Broth: Add the beef broth and bring the soup to a simmer. Let it cook for 15 minutes, allowing the flavors to blend.

  • Add Noodles and Vegetables: Stir in the alphabet noodles, frozen corn, and frozen green beans. Continue to simmer for 10-12 minutes until the pasta and vegetables are tender.
