For the Cauliflower:

  • 1 medium whole cauliflower, trimmed (about 2 lbs or 900 g)
  • 4 cups water (for boiling)
  • 1 teaspoon salt

For the Butter Sauce:

  • 4 tablespoons (½ stick or 56 g) unsalted butter, melted
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon dried thyme
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • 1 tablespoon lemon juice

Optional Garnish:

  • Chopped fresh parsley
  • Grated Parmesan cheese

Instructions

  • Preheat the Oven
    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Boil the Cauliflower
    • In a large pot, bring 4 cups of water to a boil.
    • Add 1 teaspoon of salt and the whole cauliflower.
    • Simmer for 5-7 minutes, then drain and pat dry.
  • Prepare the Butter Sauce
    • In a bowl, whisk together melted butter, minced garlic, paprika, cumin, thyme, salt, black pepper, and lemon juice.
  • Coat the Cauliflower
    • Place the cauliflower on the baking sheet and brush half of the butter sauce evenly over it.
  • Roast the Cauliflower
    • Bake for 30-40 minutes, basting with the remaining butter sauce every 10-15 minutes, until golden-brown.
  • Garnish and Serve
    • Sprinkle with fresh parsley and grated Parmesan cheese, then slice and serve warm.

Notes

  • For extra crispiness, roast at 425°F (220°C) for the last 5 minutes.
  • Make it vegan by replacing butter with olive oil or vegan butter.
  • Leftovers can be stored in the fridge for up to 3 days and reheated in the oven.
