For the Cauliflower:
- 1 medium whole cauliflower, trimmed (about 2 lbs or 900 g)
- 4 cups water (for boiling)
- 1 teaspoon salt
For the Butter Sauce:
- 4 tablespoons (½ stick or 56 g) unsalted butter, melted
- 2 garlic cloves, minced
- 1 teaspoon paprika
- ½ teaspoon ground cumin
- ½ teaspoon dried thyme
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- 1 tablespoon lemon juice
Optional Garnish:
- Chopped fresh parsley
- Grated Parmesan cheese
Instructions
- Preheat the Oven
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Boil the Cauliflower
- In a large pot, bring 4 cups of water to a boil.
- Add 1 teaspoon of salt and the whole cauliflower.
- Simmer for 5-7 minutes, then drain and pat dry.
- Prepare the Butter Sauce
- In a bowl, whisk together melted butter, minced garlic, paprika, cumin, thyme, salt, black pepper, and lemon juice.
- Coat the Cauliflower
- Place the cauliflower on the baking sheet and brush half of the butter sauce evenly over it.
- Roast the Cauliflower
- Bake for 30-40 minutes, basting with the remaining butter sauce every 10-15 minutes, until golden-brown.
- Garnish and Serve
- Sprinkle with fresh parsley and grated Parmesan cheese, then slice and serve warm.
Notes
- For extra crispiness, roast at 425°F (220°C) for the last 5 minutes.
- Make it vegan by replacing butter with olive oil or vegan butter.
- Leftovers can be stored in the fridge for up to 3 days and reheated in the oven.
