  • 1 lb cauliflower, cut into florets
  • 0.7 lb broccoli, cut into florets
  • Salt, black pepper, curry powder (to taste)

  • 2 tablespoons milk
  • 1 small onion, chopped
  • 1 carrot, diced
  • 2 bell peppers, diced
  • 0.5 lb cherry tomatoes, halved
  • 5 eggs
  • 6.9 oz heavy cream
  • ¾ cup + 1 tablespoon flour
  • Parsley, finely chopped
  • ¼ cup cheese (grated, cheese of choice)

For the Sauce:

  • 2 tablespoons Greek yogurt
  • 1 tablespoon mayonnaise
  • 2 cloves garlic, minced
  • Chopped dill (to taste)

Instructions

  • Prepare the Vegetables

    • Preheat the oven to 375°F (190°C).
    • Toss the cauliflower and broccoli florets with olive oil, salt, black pepper, and curry powder.
    • Spread on a baking sheet and roast for 15-20 minutes, until slightly tender.
  • Sauté the Aromatics

    • Heat olive oil in a skillet over medium heat.
    • Add the chopped onion and cook until soft (about 5 minutes).
    • Stir in the carrot and bell peppers, cooking until slightly tender.
    • Add the halved cherry tomatoes and cook for 3-4 more minutes.
  • Prepare the Batter

    • In a large bowl, whisk together eggs, heavy cream, milk, and ¾ cup flour until smooth.
    • Season with salt and pepper to taste.
    • Fold in the roasted cauliflower and broccoli, sautéed vegetables, and parsley.
  • Assemble and Bake

    • Grease a baking dish with olive oil.
    • Pour in the vegetable and egg mixture and spread evenly.
    • Sprinkle the grated cheese on top and dust with 1 tablespoon of flour.
    • Bake for 30-35 minutes, until golden brown.
  • Make the Sauce

    • In a bowl, mix Greek yogurt, mayonnaise, minced garlic, and chopped dill.
