  • 700g (24.7 oz) cabbage, finely chopped
  • 200g (7 oz) cheese (cheddar or mozzarella), grated
  • 1 onion, finely chopped
  • 1 carrot, grated
  • A bunch of spring onions, chopped
  • 100g (3.5 oz) bacon (optional), chopped
  • Salt, to taste
  • Black pepper, to taste
  • Sunflower oil, as needed

Instructions

1. Prepare the Vegetables

  • Peel and grate the potatoes and carrot.
  • Finely chop the cabbage, onion, and spring onions.

2. Cook the Bacon (Optional)

  • If using, chop the bacon into small pieces.
  • Cook in a skillet over medium heat until crispy.
  • Remove and set aside, leaving the bacon fat in the pan for added flavor.

3. Sauté the Vegetables

  • In the same skillet, add a little sunflower oil if needed.
  • Sauté the onion until soft and translucent.
  • Add the grated carrot and chopped cabbage, cooking for about 10 minutes until tender.
  • Season with salt and black pepper to taste.

4. Combine the Ingredients

  • In a large mixing bowl, combine the grated potatoes, sautéed vegetables, and crispy bacon (if using).
  • Mix well to ensure even distribution.

5. Assemble the Casserole

  • Preheat the oven to 375°F (190°C).
  • Lightly grease a baking dish with sunflower oil.
