Ingredients
- 3 potatoes (700g / 24.7 oz), peeled and grated
- 700g (24.7 oz) cabbage, finely chopped
- 200g (7 oz) cheese (cheddar or mozzarella), grated
- 1 onion, finely chopped
- 1 carrot, grated
- A bunch of spring onions, chopped
- 100g (3.5 oz) bacon (optional), chopped
- Salt, to taste
- Black pepper, to taste
- Sunflower oil, as needed
Instructions
1. Prepare the Vegetables
- Peel and grate the potatoes and carrot.
- Finely chop the cabbage, onion, and spring onions.
2. Cook the Bacon (Optional)
- If using, chop the bacon into small pieces.
- Cook in a skillet over medium heat until crispy.
- Remove and set aside, leaving the bacon fat in the pan for added flavor.
3. Sauté the Vegetables
- In the same skillet, add a little sunflower oil if needed.
- Sauté the onion until soft and translucent.
- Add the grated carrot and chopped cabbage, cooking for about 10 minutes until tender.
- Season with salt and black pepper to taste.
4. Combine the Ingredients
- In a large mixing bowl, combine the grated potatoes, sautéed vegetables, and crispy bacon (if using).
- Mix well to ensure even distribution.
5. Assemble the Casserole
- Preheat the oven to 375°F (190°C).
- Lightly grease a baking dish with sunflower oil.
- Spread half of the potato and vegetable mixture evenly in the dish.
- Sprinkle half of the grated cheese over this layer.
- Add the remaining potato and vegetable mixture on top.
