Ingredients

Scale
  • 100 g dates, pitted
  • 70 g dried plums
  • 45 g dried cranberries
  • 50 g raisins
  • 80 g dried apricots
  • 50 g pumpkin seeds
  • 70 g walnuts, chopped
  • 75 g almonds, roasted
  • 35 g sesame seeds (reserve some for decoration)
  • 20 g pine nuts
  • 20 g oat flakes

Instructions

  1. Prepare the Dried Fruits

    • Add the dates, dried plums, cranberries, raisins, and apricots to a food processor.
    • Blend until the mixture forms a sticky, paste-like consistency. Add 1-2 teaspoons of water if needed to help the mixture blend.
  2. Mix in Nuts and Seeds

    • Transfer the blended fruit paste to a large mixing bowl.
    • Add the pumpkin seeds, walnuts, roasted almonds, sesame seeds, pine nuts, and oat flakes.
    • Mix thoroughly using a spatula or your hands until all ingredients are evenly combined.
  3. Shape the Mixture

    • Line a baking dish or shallow tray with parchment paper.
    • Spread the mixture evenly in the dish, pressing it down firmly to create a compact layer.
  4. Add Decoration

    • Sprinkle the reserved sesame seeds evenly over the top of the mixture.
    • Gently press the seeds into the surface to ensure they stick.
  5. Chill and Set

    • Place the dish in the refrigerator for at least 2 hours, allowing the mixture to firm up.
  6. Cut and Serve

    • Once set, remove the mixture from the fridge and cut it into small squares or bars.
    • Store in an airtight container in the refrigerator for up to a week.

Notes

  • Texture Adjustment: Add extra oat flakes if the mixture feels too sticky or a bit of water if too dry.
  • Customizable: Substitute nuts, seeds, or dried fruits based on preference or dietary needs.
  • Storage Tip: These bites freeze well. Store in an airtight container in the freezer for up to 2 months.
