Instructions
- Prepare the oven: Set your oven to 375°F (190°C) and either line a muffin tin with paper liners or lightly grease the individual muffin cups.
- Cook the sausage: In a skillet over medium heat, cook the ground sausage until browned and fully cooked, breaking it up into crumbles. Remove any extra grease and allow the cooked sausage to rest for a few minutes until it cools slightly.
- Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, and onion powder.
- Combine the wet ingredients: In a separate bowl, whisk together the eggs, milk, sour cream (or Greek yogurt), and melted butter (or vegetable oil) until smooth.
- Mix the wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined.
- Add the sausage and cheese: Gently fold in the cooked sausage, shredded cheese, and chopped green onions (if using) until evenly distributed throughout the batter.
- Spoon into muffin tin: Divide the muffin batter evenly among the prepared muffin cups, filling each about ¾ of the way full.
