Instructions

  • Prepare Ingredients: Dice the sweet potatoes, chop the onion, and mince the garlic. Drain and rinse the black beans and corn. Gather your spices.
  • Sauté Onion and Garlic: Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking until fragrant and softened, about 2–3 minutes.
  • Cook Ground Turkey: Add ground turkey to the pot. Break it up with a spoon and cook until browned, seasoning with a pinch of salt and pepper.
  • Add Sweet Potatoes and Spices: Stir in the diced sweet potatoes, chili powder, cumin, and paprika. Cook for 1 minute to toast the spices.
  • Combine Remaining Ingredients: Add diced tomatoes (with juice), black beans, corn, and chicken broth. Stir well to combine.
