- 1.5 cups mashed potatoes (or 16oz/450g boiled potatoes, mashed)
- 2 cans (6.5oz/185g each) canned tuna, drained
- 1 cup / 60g panko breadcrumbs
- 1 large egg, beaten
- 2–3 heaped tbsp flour
- 2 spring onions, finely diced
- 1 tbsp butter
- 2 tsp mayonnaise
- 1 tbsp fresh parsley, finely diced
- 1 tsp Dijon mustard
- Zest of ½ a lemon
- ¼ tsp garlic powder
- Salt & black pepper, to taste
- Vegetable oil (for frying)
- Oil spray (for baking/air-frying)
Instructions
- Prepare the Potatoes
- If using fresh potatoes, peel, chop, and boil until tender.
- Mash with butter, salt, and black pepper and let cool.
- Combine Ingredients
- In a large bowl, mix mashed potatoes, tuna, spring onions, parsley, Dijon mustard, lemon zest, garlic powder, mayonnaise, salt, and black pepper.
- Stir well to combine.
- Add Binders
- Mix in the beaten egg and flour.
- Slowly add panko breadcrumbs until the mixture holds together.
- Shape the Fish Cakes
- Form the mixture into small patties.
- Lightly coat in extra breadcrumbs for a crispier crust.
- Cook Using Your Preferred Method
Pan-Frying (For Crispy Cakes):
- Heat vegetable oil in a pan over medium heat.
- Cook for 3-4 minutes per side until golden brown.
- Drain on paper towels.
Baking (Healthier Option):
- Preheat oven to 400°F (200°C).
- Place cakes on a lined baking sheet and spray with oil.
- Bake for 20-25 minutes, flipping halfway.
Air-Frying (Crispy & Light):
- Preheat air fryer to 375°F (190°C).
- Arrange in a single layer and air-fry for 12-15 minutes, flipping once.
Notes
- Use cold mashed potatoes to keep the cakes firm.
- Chill patties for 15 minutes before cooking to help them hold their shape.
- For extra crunch, coat in more panko before frying.
- Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
