Description

These crispy, golden-brown tuna fish cakes are packed with bold flavors, flaky tuna, and creamy mashed potatoes. Whether pan-fried, baked, or air-fried, they make an easy and delicious meal or snack. Serve them with a zesty dip, fresh salad, or in a sandwich for a satisfying bite!


Ingredients

  • 1.5 cups mashed potatoes (or 16oz/450g boiled potatoes, mashed)
  • 2 cans (6.5oz/185g each) canned tuna, drained
  • 1 cup / 60g panko breadcrumbs
  • 1 large egg, beaten
  • 23 heaped tbsp flour
  • 2 spring onions, finely diced
  • 1 tbsp butter
  • 2 tsp mayonnaise
  • 1 tbsp fresh parsley, finely diced
  • 1 tsp Dijon mustard
  • Zest of ½ a lemon
  • ¼ tsp garlic powder
  • Salt & black pepper, to taste
  • Vegetable oil (for frying)
  • Oil spray (for baking/air-frying)

Instructions

  • Prepare the Potatoes
    • If using fresh potatoes, peel, chop, and boil until tender.
    • Mash with butter, salt, and black pepper and let cool.
  • Combine Ingredients
    • In a large bowl, mix mashed potatoes, tuna, spring onions, parsley, Dijon mustard, lemon zest, garlic powder, mayonnaise, salt, and black pepper.
    • Stir well to combine.
  • Add Binders
    • Mix in the beaten egg and flour.
    • Slowly add panko breadcrumbs until the mixture holds together.
  • Shape the Fish Cakes
    • Form the mixture into small patties.
    • Lightly coat in extra breadcrumbs for a crispier crust.
  • Cook Using Your Preferred Method

    Pan-Frying (For Crispy Cakes):

    • Heat vegetable oil in a pan over medium heat.
    • Cook for 3-4 minutes per side until golden brown.
    • Drain on paper towels.

    Baking (Healthier Option):

    • Preheat oven to 400°F (200°C).
    • Place cakes on a lined baking sheet and spray with oil.
    • Bake for 20-25 minutes, flipping halfway.

    Air-Frying (Crispy & Light):

    • Preheat air fryer to 375°F (190°C).
    • Arrange in a single layer and air-fry for 12-15 minutes, flipping once.

Notes

  • Use cold mashed potatoes to keep the cakes firm.
  • Chill patties for 15 minutes before cooking to help them hold their shape.
  • For extra crunch, coat in more panko before frying.
  • Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
