This Tortilla Quiche Bake is a light, flavorful, and protein-packed dish that makes breakfast easy and delicious. A tortilla crust replaces the traditional pastry, making it a healthier and lower-carb option. Packed with eggs, cheese, and fresh vegetables, this quiche is perfect for meal prep, brunch, or a quick weekday breakfast.

Ingredients

Scale

For the Quiche

  • 1 low-point burrito-sized tortilla (e.g., Mission Carb Balance)
  • 3 eggs
  • 2/3 cup fat-free cottage cheese
  • 1/3 cup fat-free shredded mozzarella cheese
  • 1/3 cup bell pepper (any color), chopped
  • 1/4 cup red or yellow onion, chopped
  • 1/2 cup mushrooms, chopped
  • 1/4 cup tomatoes, diced
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Optional Add-Ins

  • Fresh spinach
  • Cooked sausage crumbles
  • Shredded carrots
  • Chopped ham
  • Zucchini
  • Bacon bits
  • Feta cheese

Instructions

1. Prepare the Tortilla Crust

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a small oven-safe baking dish or pie pan.
  3. Press the tortilla into the dish to form a crust, making sure it covers the sides.

2. Mix the Egg Filling

  1. In a bowl, whisk together eggs, cottage cheese, and mozzarella cheese.
  2. Stir in Italian seasoning, garlic powder, salt, and black pepper.
  3. Add chopped bell pepper, onion, mushrooms, and tomatoes.

3. Assemble and Bake

  1. Pour the egg mixture into the tortilla crust, spreading the vegetables evenly.
  2. Bake for 25-30 minutes, or until the eggs are fully set and the edges of the tortilla are golden brown.

4. Cool and Serve

  1. Let the quiche cool for 5 minutes before slicing.
  2. Garnish with extra cheese, fresh herbs, or avocado slices.
  3. Serve warm and enjoy.

Notes

  • For a crispier crust, bake the tortilla for 5 minutes before adding the egg mixture.
  • Make it dairy-free by using plant-based cheese and almond yogurt instead of cottage cheese.
  • Store leftovers in the fridge for up to 3 days or freeze individual portions for meal prep.
